Amburana Oak Stave Finished Rye
Amburana Oak, often referred to as Brazilian Oak, has been used for generations in Brazil to age Cachaça and has only recently found its way into the American whiskey landscape. When we began our wood experiments, we wanted to explore how Amburana's distinctive character could complement the natural spice of our rye whiskey. Our chief alchemist developed a custom toast profile specifically designed to harmonize with the whiskey's existing flavor profile.
Beginning with rye whiskey aged at least six years, custom toasted Amburana oak staves are added during the final weeks of maturation. The result is a whiskey layered with gingerbread, baking spice, and warm wood influence that enhances the underlying rye character without overpowering it.
Nose: Buttercream and cinnamon sugar rise from the glass alongside fresh apple and ginger, creating an aroma that is both comforting and inviting.
Palate: Notes of warm apple pie à la mode unfold across the palate, accompanied by French vanilla ice cream, Vietnamese cinnamon, and a drizzle of caramel sweetness.
Finish: Toasted coconut and ripe red fruit linger alongside the distinctive character of freshly baked rye bread, creating a finish that is long, layered, and memorable.
