The Empyrean II
The Empyrean returns with a new expression of our signature marriage of red port and white port cask-finished bourbon, revealing an entirely new spectrum of fruit, spice, and confection.
Beginning with an 8-year-old cask strength bourbon distilled from a mash bill of 60% corn, 36% rye, and 4% malted barley, each component was finished separately before being blended and bottled at 111.5 proof. The result is a whiskey that balances richness and delicacy, where vibrant fruit notes meet warm confectionary sweetness and subtle oak influence.
Nose: Orchard blossoms and freshly cut fruit drift toward raspberry preserves and warm shortbread fresh from the oven. Notes of honeyed pastry and delicate florals create a welcoming softness.
Palate: Waves of ripe red fruit and jam unfold alongside gentle baking spice and seasoned oak. Rich and coating, the texture carries sweetness and structure in equal measure.
Finish: Fruit deepens into notes of plum and fig while warm baking spice continues to resonate. Soft oak and fading sweetness create a finish that is comforting, refined, and quietly indulgent.
