French Oak Stave Finished Bourbon
When we began our wood experiments, one forest stood above the rest. Jupilles, a historic French forest renowned for its exceptionally tight-grain oak, has supplied some of the world's finest cooperages for centuries. Our chief alchemist selected this wood and developed a custom toast profile specifically designed to complement our high-rye bourbon, creating a whiskey that is both approachable and remarkably expressive.
Beginning with high-rye bourbon aged at least six years, custom toasted French oak staves are added during the final months of maturation. This additional aging imparts soft sweetness and elegant oak character while enhancing the spice and structure already present within the bourbon.
Nose: Spiced caramel is joined by ripe red fruit and crisp apple, creating an inviting aroma reminiscent of warm funnel cake fresh from the fair.
Palate: Sweet raspberry and toasted oak lead the way before giving way to notes of tres leches, vanilla cream, and gentle cinnamon spice.
Finish: A creamy mouthfeel carries layers of toffee and vanilla cream while a touch of cold smoke emerges beneath the sweetness, adding complexity to the lingering finish.
